Goat Cheese and Greens Flatbread

This is a great quick dinner or anytime snack.  It combines all of my favorites--goat cheese, greens, garlic, bacon and pizza.


Balsamic tomatoes:
1 pint cherry tomatoes
1 TBS balsamic vinegar
2 TBS olive oil
Chopped basil
salt and pepper
Bake at 350 for about 30 minutes.

For the Flatbread:

Pizza dough from the grocery store (or local pizzeria)
Roll and stretch it out, coat with olive oil and grill both sides.

For the Greens:
I like an organic spring mix, but any greens will do.
Toss with lemon juice, olive oil, salt and pepper.
I also like to add bacon (yum, bacon)

Once the flatbread and tomatoes are done, smear with your favorite softened goat cheese (I add roasted garlic and basil to mine), add greens and tomatoes and enjoy!
