First field trip....(Ta-daa!)
He's been waiting for this day for three months--first field trip with friends. Today honey bear is going to see Disney on Ice with all his four year old friends. It was so cute this morning when I dropped him off, they all had their homemade snowman shirts on. Really cute snowmen made out of feet.
Up next in Rifeland: Cub Scout badge ceremony on Monday. I'll post picks on Tuesday if all goes well.
Sausage soup
I totally upgraded this from someone's blog and it is soo yummy. It makes a big batch, so I froze half. Tyler and I were fighting over the last bowl. Gentlemen that he is-- I had the pleasure of finishing it :)
The recipe:
1 pkg cheese tortellini
5 mild Italian sausage links w/out casing
1 med onion, diced
1 bell pepper, diced
4 cloves garlic chopped
2 cans beef broth
1 cup water
2 cans diced tomatoes (15 oz ish)
1 can tomato sauce (12 oz ish)
3 sliced carrots
1 zucchini or squash chopped
1 bag baby spinach
1 1/2 tsp Italian seasoning
Garlic powder, salt & pepper
Parmesan cheese for topping
Sauté onions, peppers, carrots until soft. Add sausage, then garlic and cook until sausage is done. Drain excessive fat if any. Add spices, broth, tomato sauce and tomatoes. Bring to boil. Simmer on low 30 mins.
Add squash and tortellini. Cook for about 10 minutes. In last 5 minutes add the spinach--yes, the whole bag! Put it in your favorite bowl, top with Parmesan cheese and enjoy!
From the test kitchen: next time I may add more tomato sauce. The tortellini really soaks up the broth in the fridge. Serve with garlic bread.

Snowy Day Performance
Last night was Mikaels musical debut. Height played a factor in visibility, but he sang all the songs.
Everyone had to dress for a snowy experience even though it was about 70 degrees here.
There are more pics on the hubby's camera---but he can't find his USB cord ( go figure). Enjoy :)
